The Dinner Solution
Julie| August 15, 2008 1:47 amDuring my time at home this summer we’ve been eating very well. I’ve been cooking and baking up a storm. I only wished we ate this well during the rest of the year.
Then I had what could only be called an epiphany.
Here’s the situation. During the work/school week, we’re so famished by the time we get home that we end up getting fast food or heating up frozen meals instead of cooking from scratch. This has been the case for YEARS, and we’re sick of it. With the kids returning to school and me returning to work in a couple of weeks, I was desperate to find a way to fit home-cooked meals into our busy lives. Finally I thought, if we’re too hungry and tired to cook dinner as soon as we get home, why not cook AFTER eating dinner?
So this week I’ve been running a simulation. Every night, we’ve been eating dinner around 6:30. Afterwards, I clean off the table, put the dirties in the dishwasher, and then get to work.
How is it going? In a word, WONDERFULLY. Tonight we had chicken sausage / broccoli (cooked 2 nights ago) and turkey chili / brussel sprouts (cooked last night). We have so much leftover that I didn’t need to cook tonight (for tomorrow). I could really get used to this.

smart! how do you make brussel sprouts appetizing?
I got this recipe out of Joy of Cooking. Trim the brussel sprouts and cut each one in half. Then saute in butter until soft. Instant joy!
Goodness I hear you! (I work full time overnight).
This last year I started using the crockpot a lot. I really had to get creative since we eat mostly Vietnamese or chinese food.
Just today I made bo kho (Vietnamese beef stew). In the last few weeks we had chicken cari (a sweet vietnamese curry), Indian chicken in a spinach sauce (totally forgetting the name here but you get the sauce at TJs.. actually any of the TJ sauces can be used in the crock with meat just add a little water to it), whole chicken cut up in a chunky tomato sauce (something we used to eat as kids). I also buy some sort of chinese BBQ one night a week b/c its cheap and we usually have frozen won tons with noodles (there is vietnamese brand that is almost like homemade).
